Rib Eye Steaks with Marinade
Greek Chicken Skewers
Lemon Bars

This is a great marinade for steaks, and is wonderful for beef strips for stir-frys.

Rib Eye Steaks with Marinade

½ cup soy sauce
¼ cup real maple syrup
6 cloves garlic, minced
1 tablespoon grated fresh ginger
1 teaspoon mustard powder
½ teaspoon sesame oil
¼ teaspoon hot pepper sauce
½ cup beer
4 (10 ounce) beef rib eye steaks

Rib Eye Steak and Marinade
Directions:
Step 1
In a medium size mixing bowl, combine soy sauce, maple syrup, garlic, ginger root, mustard powder, sesame oil, and Tabasco sauce; mix well to blend. Now add beer, and stir lightly to mix.

Step 2
Prepare steaks by scoring any fatty outside areas on steak with a knife, (this prevents the steaks from curling when barbecuing). Place steaks in a casserole dish, and pour marinade over. Using a fork, punch holes in steaks so that the marinade penetrates into the steaks. Turn steaks over, and repeat punching holes.

Step 3
Cover with clear wrap or foil, and let marinate in the refrigerator for at least 1 hour or longer. You can also refrigerate and marinate overnight.

Step 4
Prepare and preheat barbecue to high heat. Place steaks directly on grill and sear one side for about 15 seconds. Turn steaks over and cook for about 5 minutes, then turn over and cook for another 5 minutes for medium-rare, depending on thickness. Test for doneness by cutting into the middle of the steak.

Greek Chicken Skewers

¼ cup lemon juice
¼ cup wok oil
⅛ cup red wine vinegar
1 tablespoon onion flakes
1 tablespoon minced garlic
1 lemon, zested
1 teaspoon Greek seasoning
1 teaspoon poultry seasoning
1 teaspoon dried oregano
1 teaspoon ground black pepper
½ teaspoon dried thyme
3 skinless, boneless chicken breasts, or as needed, cut into 1-inch pieces
8 bamboo skewers, or as needed, soaked in water for 30 minutes

Chicken Skewers
Directions:
Step 1
Whisk lemon juice, oil, vinegar, onion flakes, garlic, lemon zest, Greek seasoning, poultry seasoning, oregano, pepper, and thyme together in a bowl and pour into a resealable plastic bag.

Step 2
Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 2 hours.

Step 3
Preheat the oven to 350 degrees F (175 degrees C).

Step 4
Remove chicken from the marinade and shake off excess; thread onto skewers. Discard the remaining marinade. Place the skewers on a baking sheet.

Step 5
Roast in the preheated oven until golden brown, about 20 minutes.

Note: The skewers can also be cooked on the grill. Preheat an outdoor grill for medium heat and lightly oil the grate. Cook skewers on the preheated grill, turning occasionally, until an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C).

Lemon Bars

1 cup butter, softened
½ cup white sugar
2 cups all-purpose flour
4 eggs
1 ½ cups white sugar
¼ cup all-purpose flour
2 lemons, juiced

Directions:
Step 1
Preheat oven to 350 degrees F (175 degrees C).

Step 2
In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.

Step 3
Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.

Step 4
Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. For a festive tray, make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green. After both pans have cooled, cut into uniform 2 inch squares and arrange in a checker board fashion.
